Baked Pumpkin Donuts with Cinnamon Sugar

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. Transfer the batter to a piping bag and fill the donut pan about halfway.
  6. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  7. While the donuts are baking, mix the granulated sugar and cinnamon for the coating.
  8. Once baked, let the donuts cool for a few minutes before dipping them in the cinnamon sugar mixture.
  9. Allow to cool completely on a wire rack.

Notes

  • These donuts are best enjoyed fresh, but can be stored for a couple of days in an airtight container.
