Baked Eggs Napoleon

A delicious and easy recipe for baked eggs topped with turkey bacon, perfect for a hearty breakfast or brunch.

  • 3 slices turkey bacon
  • 1 cup spinach
  • 1/2 cup shredded cheese
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy and set aside.
  3. Sauté the spinach in olive oil until wilted.
  4. In a baking dish, layer the spinach and crumbled bacon.
  5. Crack the eggs over the top, season with salt and pepper, and sprinkle with cheese.
  6. Bake for 15-20 minutes or until eggs are set.

Notes

  • Can substitute regular bacon for turkey bacon if preferred.
  • Try adding other vegetables like bell peppers or mushrooms.
