  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 cup coconut milk
  • 2 carrots, sliced
  • 2 cups water

Instructions

  1. Marinate the chicken with curry powder, salt, and pepper for at least 30 minutes.
  2. Heat oil in a pot over medium heat and sauté onion, bell pepper, garlic, and ginger until fragrant.
