  • 3/4 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 6 apples, peeled, cored, and sliced
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 cups vanilla ice cream

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine 2 cups of flour, 1 teaspoon of salt, and 1 tablespoon of sugar. Cut in 3/4 cup of butter until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough forms a ball.
  3. Wrap in plastic and refrigerate for at least 4 hours or overnight.
  4. Roll out the dough to fit a 9-inch pie pan and place the bottom crust in the pan.
  5. In another bowl, toss the sliced apples with 1 cup sugar, 2 tablespoons flour, cinnamon, nutmeg, and lemon juice. Fill the pie crust with the apple mixture.
  6. Cover with the top crust, cut slits for steam to escape, and bake for 15 minutes in the preheated oven.
  7. Reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes, or until the apples are soft and the crust is golden brown.
  8. Let the pie cool, then serve warm with a scoop of vanilla ice cream on top.
