Apple Hand Pies

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, chilled
  • 1/4 cup ice water
  • 4 cups peeled, chopped apples
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Add ice water, a tablespoon at a time, until the dough forms a ball. Wrap in plastic and refrigerate for 30 minutes.
  4. In another bowl, combine apples, sugar, cinnamon, and lemon juice.
  5. Roll out dough and cut into circles. Fill with apple mixture and fold to seal.
  6. Place on a baking sheet, brush with egg wash.
  7. Bake for 20-25 minutes until golden brown.

Notes

  • These pies can be made ahead and frozen.
