Apple Crisp Cheesecake

A delicious twist on the classic cheesecake with a fall-inspired apple crisp topping.

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 6 cups sliced apples
  • 2 teaspoons cinnamon
  • 1 cup oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese, brown sugar, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the prepared crust.
  5. Toss the sliced apples with cinnamon and layer them over the cheesecake filling.
  6. In a separate bowl, combine the oats, flour, and brown sugar. Sprinkle this mixture over the apples.
  7. Bake for 55-60 minutes, or until the cheesecake is set around the edges. Let it cool, then refrigerate for at least 4 hours before serving.

Notes

  • For extra flavor, add a pinch of nutmeg to the apple mixture.
  • Serve with whipped cream for added indulgence.
