- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1 cup unsalted butter, melted
- 4 packages (8 ounces each) cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 6 cups sliced apples
- 2 teaspoons cinnamon
- 1 cup oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese, brown sugar, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the prepared crust.
- Toss the sliced apples with cinnamon and layer them over the cheesecake filling.
- In a separate bowl, combine the oats, flour, and brown sugar. Sprinkle this mixture over the apples.
- Bake for 55-60 minutes, or until the cheesecake is set around the edges. Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- For extra flavor, add a pinch of nutmeg to the apple mixture.
