- 2 pounds pork loin
- 1 cup apple cider
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons brown sugar
- 2 pounds sweet potatoes
- 1/2 cup heavy cream
- 2 tablespoons butter
- 1/4 teaspoon nutmeg
- Preheat the oven to 375°F.
- Season the pork loin with salt and pepper, then heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned.
- Transfer the pork to a baking dish and pour apple cider and brown sugar over it. Cover with foil and bake for 1 hour.
- Meanwhile, peel and chop the sweet potatoes, then boil in salted water until tender. Drain.
- In a bowl, mash the sweet potatoes with butter, heavy cream, nutmeg, and adjust seasoning to taste.
- Once the pork is done, let it rest for a few minutes before slicing. Serve with the mashed sweet potatoes on the side.
