  • 2 pounds pork loin
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 2 pounds sweet potatoes
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F.
  2. Season the pork loin with salt and pepper, then heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned.
  3. Transfer the pork to a baking dish and pour apple cider and brown sugar over it. Cover with foil and bake for 1 hour.
  4. Meanwhile, peel and chop the sweet potatoes, then boil in salted water until tender. Drain.
  5. In a bowl, mash the sweet potatoes with butter, heavy cream, nutmeg, and adjust seasoning to taste.
  6. Once the pork is done, let it rest for a few minutes before slicing. Serve with the mashed sweet potatoes on the side.
