Apple Cheddar Sweet Potato Soup

A warm and comforting soup that combines the flavors of sweet potatoes, apples, and cheddar cheese.

  • 2 cups sweet potatoes, peeled and diced
  • 1 cup apples, peeled and chopped
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
  2. Add sweet potatoes and apples to the pot, stirring for a few minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until sweet potatoes are tender.
  4. Blend the soup using an immersion blender until smooth.
  5. Stir in cheddar cheese and heavy cream until melted and incorporated. Season with salt and pepper.
  6. Serve hot, garnished with additional cheese if desired.

Notes

  • For a vegan version, substitute the heavy cream with coconut milk and cheese with nutritional yeast.
  • Adjust the thickness of the soup by adding more broth if needed.
