Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs, then mix in the vegetable oil and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced apples gently.
  6. Pour half of the batter into the prepared pan.
  7. In a small bowl, mix the brown sugar and cinnamon, then sprinkle half of it over the batter in the pan.
  8. Pour the remaining batter over the sugar mixture and top with the rest of the brown sugar and cinnamon mix.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
